The hand pie is filled with beautiful bitter cicoria, fava beans, garlic, and pecorino cheese. It’s a simple dish but so comforting and nostalgic to me.
There are so many dishes my Nonna would make that were my favourite - to be honest all. It’s harder for her to cook like she used to so the memories of these dishes she would cook are in my my heart and mind forever.
There is this one dish my Nonna would make - fave e cicoria that I love so much. So simple, so delicious, so warming. She would make a fava bean puree and in the centre put some cicoria that she sautéed with a little olive oil and garlic and finish the dish with some pecorino. We would eat that with some beautiful crusty bread.
I asked Paul from Footstep Organics if he had anything new and he had this beautiful puntarelle - or cicoria as we would call it. I wanted to do a play on this dish in hand pie form.
